I just bought all 29 items for $31.79. Woot, woot! I know, to you, it doesn’t look like it’s as much as it is, but I saved $22.50 and a $70 coupon book is in the mail from Kellogs Fuel for School.

The 2nd best thing about this Wal-mart trip was that I was ALONE.

Mini Turkey Meatballs w/Penne

I have come to the conclusion that Menu Planning for the entire week at my house is nearly impossible.  Last week I almost got everything back together and then Jon went out of town for 2 nights and then we went on a (awesome) spur of the moment mini-vacation.  That is how our lives are.  Eventually I will learn how to really get it all together. :)

So with that revelation, I will take it one day at a time.  Here is my “Menu” for tonight.  Mini Turkey Meatballs and Penne w/green beans and corn.  I found this recipe from Giada on Food Network, but tweaked it to make it a little more healthy (i.e. I baked the meatballs instead of frying them)

Ingredients

  • 1 small onion, grated (dry off excess water)
  • 3 garlic cloves, minced
  • 1 large egg
  • 1/4 cup Italian dried bread crumbs
  • 3 tablespoons ketchup
  • 1/2 cup Italian Blend Cheese (Parmesan, Romano, Asiago…)
  • 1/2 teaspoon
  • 1/4 teaspoon ground black pepper
  • 1 pound ground dark turkey meat
  • 26 ounces Simple Tomato Sauce or store-bought marinara sauce

Directions

Add the onion, garlic, egg, bread crumbs, ketchup, parsley, Italian cheeses, salt and pepper to a large bowl and blend. Mix in the turkey. Shape the turkey mixture into 1 1/4-inch-diameter meatballs. Place on a large plate or baking sheet.

Bake in the oven at 350 for about 25 min.  Turning over halfway thru. Add the marinara sauce, about 3 cups. Return all the meatballs to the pan. Turn the heat to medium-low and simmer until the sauce thickens slightly and the flavors blend, 15 to 20 minutes. Season the sauce, to taste, with salt and pepper.

Transfer the meatball mixture to a serving bowl.

You can serve this alone as an appetizer or with pasta

Our awesome keyboard player’s wife is having a little girl and I jumped at the opportunity to make something “girly”!  I love pink.

Jonah’s Room

Wow, It’s so hard to blog in the summer.  I don’t know what it is…maybe my life has turned boring.  I thought I’d share with you one of the ‘completed’ projects in my house.

Last summer (from July to October) I think I spent every moment working on the nursery for baby Jonah.  It took me forever to decide what to do on a slim budget, but when I got to it, I painted until the weekend before Jonah was born.  Most of you would call me insane, but I am 100% satisfied with the results.  If I had before pictures I would so post them.

Found this Baby’s Dream crib at a garage sale for $40.  It retails at $550.  It was beaten, but a little sand and paint made it brand new.  I still need to order the slats for the sides.  We used Jadon’s bedding but changed everything else.  Bought the picture frames and Letter’s at Hobby Lobby for 1/2 off.  I love that store!

The blankets are hanging on a decorated hanging candle rod we got for our wedding, but had nowhere to put it.  The rug is another 1/2 off special at Hobby Lobby.  The little table would be perfect if I had the rocker next to it,  but I just haven’t come up with anything cute to do with it.  It usually is adorned with diapers, lotions, a humidifier, and whatever else.  If I try to put anything cute on it, Jad runs through and takes it all off.  Any ideas???

This dresser was our old humble first dresser when we got married.  Painted, sealed and new fixtures made it look new.  I wanted the same handles all around, but who knew the top drawer would have smaller handles?!  You can’t buy that size at Lowe’s.

I still have to hang the two frames (as seen below on the floor) above the dresser.

I found the changing table in perfect condition but the only problem was the color…so I had to take it all apart and paint it.  Most of the decor was from Jadon’s room….

I’m a horrible mom.  I still haven’t replaced the pictures of Me, Jon, and Jadon!  Poor Jonah.  He’ll never know :)

It has now been 8 1/2 months since the completion of Jonah’s room and I think I have finally recovered.  I am ready to move on to my next project.  I think it will be the “Man Room” (as we call it).  One word describes it all….WOOD PANELING.  Yuck!
